I actually spoke to Chef Rosendale last night about my project. He confirmed for me the importance of enough water in the cocktail solution. “What you’re making is a hydrocolloid. It can’t form without enough hydro,” he said. The challenge here, I think is to use enough water to make it form, but not so much that it tastes diluted.

It is so cool, and so frustrating. It is going to take an obscene amount of liquor to get the solution amounts right, before I can make enough to serve to friends.
