Many electric deep fryers now come with a filtration system that will filter out small bits of leftover batter and food floating in your frying oil. However, if you have a more spartan or older model, you'll have to filter your oil manually. Filtering oil is a messy job, but it is necessary to keep your oil fresh and to prevent leftover foods from leaving a bad taste. If you don't dean out your cooking oil periodically, foods you fry in dirty oil will absorb flavors from old foods and might even taste burnt from leftover food particles.

Thanks for the safety tips Egon!

I deep fry my turkey too. I never used the turkey derrick idea, and this year sounds like a good year to start. Last year, I forgot to turn the gas off while lowering the bird in s l o w l y. I got lucky nothing happened. Not going to forget that step this year. And thank you for the brine recipe! Awesome. Going to use that too this year.

Check out last year's thanksgiving:

You'll notice I fry my turkey outside way away from the house..in the grass. Oh..you can not see it in the pictures but there was a kitchen rated fire extinguisher at the ready.
